We bought a 50 lb bag of onions and I was looking for recipes in which to use them. I looked for onion soup recipes and couldn’t find one that sounded good. So, I made my own. It was a success. This soup is creamy and thick and perfect for an Entrée or Hors d’oeuvre.
Ingredients:
2 Tb butter or margarine
3 large onions, sliced
2 cans beef broth
¼ cup flour
Salt & pepper to taste
Directions:
Melt the butter in skillet with a tight fitting lid. Add onions and cook until tender. Remove onions from skillet and puree in blender or food processor. Pour back into skillet and add beef broth. Mix flour and water to thin paste. Bring onion mixture to a boil and pour flour mixture in, a little at a time. Stir constantly. When soup is desired consistency take off fire and add salt and pepper to taste.
